Tofu Stir Fry

2 tablespoons garlic, minced
1 pound tofu, crumbled or cubed
1 pound broccoli, chopped
2 tablespoons sesame or peanut oil
1 teaspoon ginger, chopped
1 green pepper, chopped
2 cups mixed fresh vegetables (green beans, carrots, asparagus, etc)
2 tablespoons soy sauce
2 cups vegetable broth
1 tablespoon nutritional yeast
1/2 teaspoon calcium powder
1/2 teaspoon kelp powder
1 tablespoon liquid lecithin
2 cups cooked brown rice
  • In a wok or large frying pan, add oil, garlic, and tofu.
  • Stir fry until tofu begins to brown.
  • Add broccoli, ginger, pepper, and mixed veggies.
  • Stir fry for 3 minutes, then add soy sauce and broth and cook for about 10 minutes or until vegetables are tender.
  • Remove from heat.
  • Stir in brown rice, yeast, calcium, kelp and lecithin.
  • Serve.
